Turkey Breast with Avocado Cream

Ingredients
- 500 g turkey breast fillet (flat piece)
- 5 tbsp olive oil
- Salt
- freshly ground pepper
- 1 tbsp honey
- 1 tsp Mustard
- a few drops of Tabasco
- 2 large ripe avocados
- juice of half a lemon
- 100 g plain yogurt
- 2 tbsp sesame seeds
- several leaves of radicchio

Sear the turkey breast in 2 tbsp oil on all sides for 3-4 minutes. Season with salt and pepper. Transfer to a baking dish. Whisk honey, mustard, and Tabasco together, brush over the turkey, and bake in a preheated oven (electric stove 200 °C, gas stove: level 3, convection 180 °C) for 40 minutes.

Peel, halve, and pit the avocados. Roughly chop one avocado, place it in a tall mixing bowl, add half the lemon juice and yogurt, and blend until smooth. Season with salt and pepper. Toast the sesame seeds in a dry pan. Fold half of the toasted seeds into the cream.

Slice the second avocado into wedges and drizzle with the remaining lemon juice.

Clean, rinse, and pat dry the radicchio leaves.

Slice the cooked turkey breast and arrange on a plate alongside the radicchio salad, avocado slices, and avocado cream. Sprinkle the remaining sesame seeds over the cream.
