Turkey Avocado Burger: whole‑grain buns with turkey and avocado – perfect for a quick lunch on the go. The burger delivers half of the daily zinc requirement.

Ingredients

  • 0.5 lemon
  • 200 g ripe avocado (1 ripe avocado)
  • Salt
  • Pepper
  • 600 g turkey cutlets (4 turkey cutlets)
  • 1 tbsp Olive Oil
  • 160 g tomatoes (2 tomatoes)
  • 40 g watercress (1 handful) or arugula
  • 240 g whole‑grain buns (4 whole‑grain buns)

Instructions

    Squeeze half a lemon. Cut the avocado in half, remove the pit and scoop out the flesh with a spoon.

    Mash the avocado flesh with a fork, stir in 2 tsp lemon juice, and season the avocado spread with salt and pepper.

    Wash the turkey cutlets, pat them dry with paper towels, and season both sides with salt and pepper.

    Heat olive oil in a large non‑stick pan. Add the turkey cutlets and cook for about 4 minutes on each side over medium heat.

    Meanwhile, wash the tomatoes, trim the stem ends, and slice them into rounds.

    Trim the thick stems from the watercress. Rinse, dry, and optionally chop roughly if desired.

    Slice the whole‑grain buns in half and spread avocado spread on the bottom halves. Layer turkey cutlets, tomato slices, and watercress on top, then place the upper bun halves.
