Tunisian-Style Savory Pie

Ingredients
- 5 sheets phyllo dough
- 0.5 chicken (deboned)
- 8 eggs
- 150 g grated cheese
- 4 tbsp cream cheese
- 1 onion
- a pinch cinnamon
- 1 bunch parsley (chopped)
- olive oil
- Salt
- black pepper (ground)

Brush a shallow baking pan (about 28 cm diameter, 3 cm height) with oil and lay the phyllo dough sheets overlapping inside.

Wash the chicken and pat dry.

Peel and finely dice the onion. Sauté in 2 tbsp hot oil. Add the chicken, cook briefly, then pour in about 250 ml water, cover and simmer for ~45 min until the meat separates from the bones. Remove from liquid, separate meat from bones, shred into small pieces, removing skin if desired.

Mix shredded chicken with 6 eggs, parsley, cheese, and cream cheese. Boil remaining eggs, cool, peel, finely chop, and fold into the mixture. Season with salt, pepper, and cinnamon. Spread over the dough. Beat the remaining eggs and pour over to cover filling well. Brush lightly with olive oil.

Bake in a preheated oven at 160°C for about 30 min until golden brown. Remove from oven, let cool slightly, and serve warm.
