Ingredients
- 4 eggs
- 30 g fresh black truffles
- Salt
- Pepper (freshly ground)
- 2 tbsp butter

Brush the truffles thoroughly and slice them into thin shavings. Beat the eggs in a large bowl and fold in the truffle slices; cover and let sit at room temperature for about 30 minutes.

Add 2 tbsp water and lightly whisk the egg-truffle mixture with a fork, seasoning with salt and pepper. Allow the butter to foam in a non-stick pan.

Pour the egg mixture into the pan and cook over medium heat until set.

When the eggs are almost set but still slightly moist inside, fold one third of the omelette edge inward. Serve the omelette on a preheated plate garnished with parsley.
