Tricolored Lasagna Sheets

Ingredients
- 400 g durum wheat flour
- 4 eggs
- 0.5 tsp Salt
- 1 tbsp Olive Oil
- 1 tsp saffron powder
- 3 tsp spinach powder (from spice shop)
- 1 tsp oil

Knead a smooth pasta dough from flour, eggs, salt and olive oil. Add more water or flour if needed. Divide the dough into three parts and color two of them.

For the yellow dough dissolve saffron powder in 1 tbsp hot water and incorporate. For the green dough simply knead in spinach powder.

Shape each color into a ball, brush with oil, cover with a cloth and let rest for 30 minutes.

Roll out the dough on a floured surface or use a pasta machine.

Cut each ball into four pieces. Roll each piece into a long strip (about 30 cm long and 5 cm wide). Press the three colors together at the edges about 2 mm wide, then roll over with a rolling pin or pass through the pasta machine. Let the finished tricolored sheets dry on floured kitchen towels for 2-3 hours.

For the colorful lasagna variant layer different colored sheets on top of each other and press firmly together. Divide the dough into four pieces and process them again with the edges up to form sheets.
