Tortilla with Fried Eggs

Die Tortilla mit Spiegelei von Spoonsparrow ist schnell gemacht und immer wieder lecker.

Ingredients

  • 2 red chili peppers
  • 3 shallots
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 15 g tomato paste (1 tbsp)
  • 200 g peeled and chopped tomatoes (canned)
  • 45 g ajvar (3 tbsp; spice paste)
  • Salt
  • Pepper
  • 2 tbsp Lime juice
  • 1 cucumber
  • 10 g basil (0.5 bunch)
  • 2 green onions
  • 4 whole wheat tortillas
  • 4 eggs

Instructions

    Halve the chili peppers lengthwise, remove the seeds, wash and chop them. Peel and finely chop the shallots and garlic. Heat 1 tbsp of oil in a pot over medium heat for 2 minutes. Stir in the tomato paste, add the tomatoes and ajvar, season everything with salt, pepper and 1 tbsp of lime juice, and simmer gently over low heat for 10 minutes, stirring occasionally until thickened. Then let it cool for 5 minutes.

    Meanwhile, peel, wash and dice the cucumber into small cubes. Wash, shake dry and chop the basil. Peel, wash and cut the green onions into fine rolls. Mix everything with cucumber cubes, salt, the remaining lime juice, pepper and 2 tbsp of oil.

    Warm the tortillas in the oven at 80 °C (convection 60 °C; gas: level 1) for 5 minutes. Heat the remaining oil in a large pan. Crack the eggs into it and fry them as sunny-side up for 3-4 minutes over medium heat. Arrange the tortillas on a plate. Top with fried eggs, cucumber salsa and chili sauce.
