Tortellini Tortilla with Chorizo

Ingredients
- 1 onion
- 1 Garlic clove
- 1 red chili pepper
- 250 g chorizo
- 400 g tortellini (refrigerated section)
- Salt
- 2 tbsp olive oil
- 250 g Peas (frozen)
- 8 eggs
- 100 g grated cheese (e.g., Manchego)
- Pepper (freshly ground)
- 2 tbsp freshly chopped parsley

Preheat the oven to 200°C with upper and lower heat.

Peel and finely dice the onion and garlic. Wash the chili pepper, cut it in half lengthwise, remove seeds and white membranes, and chop finely. Peel the chorizo and slice it.

Cook the tortellini in boiling salted water for about 4 minutes. Drain and set aside.

Heat oil in a large ovenproof pan (use two pans if necessary). Briefly sauté onion, garlic, and chili. Add the chorizo, then peas and tortellini. Whisk eggs with cheese, salt, and pepper, pour over the mixture, and spread evenly by tilting the pan. Let it set briefly, then bake in the oven for about 15 minutes until done. Serve hot, cut into pieces, and sprinkle with parsley.
