The Tomatoes with Feta from Spoonsparrow are perfect for a healthy grill night!
Ingredients
- 4 tomatoes
- 3 tbsp olive oil
- 1 slice whole grain toast
- 1 tsp chopped rosemary
- 1 tsp chopped parsley
- 150 g Feta
- Salt
- Pepper
Instructions

Wash the tomatoes and cut off the tops. Hollow out the tomatoes, salt the insides, and let them drain on kitchen paper.

Heat 2 tbsp of oil in a pan and fry the diced toast until golden. Add herbs, season with salt and pepper, then cool slightly. Mix in crumbled feta. Fill the tomatoes with this mixture and place them in a baking dish greased with 1 tsp oil. Replace the tops. Drizzle remaining oil over the top and bake in a preheated oven at 200 °C (fan: 180 °C) for about 25 minutes.
