Tomato Zucchini Salad with Feta

Our tomato and zucchini salad with feta from Spoonsparrow is a great grilled side dish and provides a lot of minerals.
Ingredients
- 2 Zucchini
- 4 EL Olive oil
- Salt
- Pepper
- 400 g Tomatoes
- 200 g Cherry tomatoes
- 3 spring onions
- 1 bunch basil (20 g)
- 2 EL Apple cider vinegar
- 100 g Feta (45 % fat in milk)
Instructions

Clean, wash and cut the zucchini into pieces. Heat 1 tbsp of oil in a pan and sauté the zucchini over medium heat for 5 minutes. Season with salt and pepper.

Clean, wash and chop the tomatoes finely. Wash and halve the cherry tomatoes. Clean, wash and slice the spring onions into rings. Wash, dry and pluck the leaves from the basil.

Mix the zucchini, tomatoes, cherry tomatoes and basil. Add the remaining oil and apple cider vinegar, mix and season with salt and pepper. Crumble the feta. Serve the salad sprinkled with feta.
