Tomato Spinach Salad with Strawberries

Ingredients

  • 2 Tomatoes
  • 1 handful beautiful spinach leaves
  • 4 strawberries
  • 100 g oyster mushrooms
  • 1 tbsp butter
  • 1 ball mozzarella
  • 0.5 Red Onion
  • 1 tsp white wine vinegar
  • 1 tsp raspberry vinegar
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp chickpeas (canned/jar)

Instructions

    Wash tomatoes, cut off stems and quarter them.

    Clean and wash strawberries, then quarter them as well.

  3. 3.

    Cut mozzarella into cubes.

  4. 4.

    Slice onion into rings.

  5. 5.

    Clean oyster mushrooms, optionally cut slightly smaller, and sauté in hot butter for a few minutes; season with salt and pepper.

    Wash spinach leaves, pat dry, and line two bowls with them.

    Whisk vinegar, salt, pepper, and oil together, then add chickpeas, onion rings, and mozzarella cubes.

    Add the sautéed mushrooms to the prepared bowls, arrange tomato and strawberry slices on top, and pour the salad dressing over the chickpeas, onion rings, and mozzarella cubes.
