Tomato Soup with Shell Pasta

Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 1 tbsp Olive Oil
  • 2 cans diced tomatoes
  • 1 pinch raw cane sugar
  • Salt
  • freshly ground pepper
  • 1 pinch fresh nutmeg
  • 200 g whole wheat shell pasta
  • 3 basil stems

Instructions

    Peel and dice the onion and garlic. Heat oil in a pot and sauté the onion until translucent. Deglaze with tomatoes. Add garlic. Season with raw cane sugar, salt, pepper, and fresh nutmeg. Add 100 ml water, bring to a boil briefly, then cover and simmer over low heat for 10 minutes.

    Meanwhile cook the pasta in plenty of salted water until al dente, then drain.

    Wash basil, shake dry, and pluck leaves. Arrange tomato soup on plates and add 3–4 tbsp of shell pasta. Serve garnished with basil.
