Tomato Salad with Grapefruit and Turkey

Ingredients

  • 600 g turkey breast fillet
  • 3 sprigs thyme
  • 1 handful basil
  • 1 handful chives
  • 1 tbsp Olive Oil
  • 0.5 lemon (juice)
  • Salt
  • Pepper
  • 1 Red Onion
  • 150 g mixed salad greens (e.g., frisée, sorrel, arugula)
  • 4 tomatoes
  • 1 grapefruit
  • 1 tsp Honey
  • 1 tbsp Olive Oil
  • Salt
  • Pepper

Instructions

    Wash the turkey breast and pat dry with paper towels. Cut into cubes. Wash thyme and basil, shake off excess moisture, and pluck leaves from stems. Wash chives, dry, and cut into small rolls. Slice basil leaves into strips. Toss the herbs with olive oil and lemon juice, then mix in the turkey cubes. Season with salt and pepper and brown in a non-stick pan for about 5 minutes.

    Peel and finely dice the onion. Wash and dry the salad mix. Wash tomatoes, quarter them, remove seeds, and cut into strips. Thoroughly peel the grapefruit and cut out the segments. Squeeze the remaining fruit flesh to extract juice, then whisk with honey and olive oil. Season with salt and pepper. Combine the salad ingredients and serve with the turkey cubes (optionally on wooden skewers).
