Tomato Rice with Ground Meat

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 400 g mixed ground meat
  • 250 g long-grain rice
  • 800 g peeled Tomatoes (canned)
  • 200 ml vegetable broth
  • Salt
  • Pepper
  • fresh thyme (chopped)
  • fresh oregano (chopped)

Instructions

    Peel and finely chop the onion and garlic, then sauté them in a pot with the oil until translucent.

    Add the ground meat and cook over medium heat, breaking it up with a fork until crumbly.

    Stir in the rice and peeled tomatoes, then pour in the vegetable broth and season with salt and pepper.

  4. 4.

    Fold in the herbs. Simmer on medium heat for about 15 minutes, adding more broth if needed; stir occasionally.

    Taste again with salt and pepper and serve plated on dishes.
