Ingredients

  • 1.3 kg chicken (1 whole chicken)
  • Salt
  • ground pepper
  • 4 tbsp olive oil
  • 4 sprigs thyme
  • 1 sprig rosemary
  • 400 g cherry tomatoes
  • 8 garlic cloves

Instructions

    Wash herbs, shake dry. Wash the chicken, pat dry and rub inside and out with salt and pepper. Place rosemary and 3 thyme sprigs in the cavity of the chicken. Wash tomatoes and pat dry.

    Add oil to a large ovenproof dish, place the chicken inside, and arrange garlic cloves and tomatoes around it.

    Season vegetables with salt and pepper. Bake in preheated oven at 200 °C (convection) for about 40–50 minutes, basting occasionally with the pan juices. Serve garnished with thyme.
