Tomato Bread Salad

Fruity and crunchy at the same time – perfect for summer!
Ingredients
- 6 slices whole‑grain baguette
- 3 tbsp olive oil
- 500 g tomatoes
- 2 shallots
- 1 Garlic clove
- 2 tbsp black, pitted olives
- 1 bunch Basil
- 1 tbsp White Wine Vinegar
- 200 g Feta Cheese
- Salt
- Pepper
Instructions

Cut the whole‑grain baguette into roughly 2 cm cubes. Heat 1 tablespoon of olive oil in a pan and toast the bread cubes over medium heat for about 5 minutes, turning them until golden brown. Set aside.

Meanwhile, wash the tomatoes, halve them, remove the stems, and chop into small pieces. Peel the shallots and garlic. Slice the shallots into thin rings and mince the garlic. Halve the olives. Wash the basil, pat dry, and roughly chop it. Combine all prepared ingredients with the toasted bread cubes.

Drizzle the remaining oil and vinegar over the tomato‑bread mixture and crumble feta on top. Season with salt and pepper. Divide the salad onto four plates and serve.
