Tomato and Mozzarella Pasta Salad

Ingredients

  • Salt
  • Pepper (freshly ground)
  • 100 g whole wheat penne
  • 300 g cherry tomatoes
  • 2 tbsp Red wine vinegar
  • 3 tbsp olive oil
  • ½ bunch mixed herbs (e.g., thyme, parsley, basil)
  • 1 ball mozzarella (125 g)

Instructions

    Cook the pasta in plenty of boiling salted water until al dente. Wash and dry the cherry tomatoes, then halve them.

    Drain the pasta in a colander, reserving ½ cup of cooking liquid. Rinse the pasta under cold water and let it drain. Mix the reserved cooking liquid with vinegar, salt, pepper, and olive oil. Wash the herbs, shake off excess moisture, chop the leaves, and fold into the dressing; season to taste.

    Drain the mozzarella and cut into coarse cubes. Combine all ingredients in a large bowl and toss gently.
