Tofu Wraps

With these tofu wraps from Spoonsparrow, lunch will be a delicious hit!

Ingredients

  • 125 g soy yogurt
  • 80 g peanut butter
  • 2 tbsp chopped peanuts
  • 3 tbsp teriyaki sauce
  • Salt
  • black pepper (freshly ground)
  • 200 g tofu (mango curry flavored, or substitute with nut tofu or smoked tofu)
  • 2 red bell peppers
  • 4 Spring Onions
  • 2 tbsp Rapeseed oil
  • 0.5 lime (juice)
  • 1 handful sprouts (e.g., radish sprouts)
  • 1 handful coriander leaves
  • 4 vegan wraps (ready-made)

Instructions

    Whisk the yogurt with peanut butter, peanuts and 1 tbsp teriyaki sauce. Season with salt and pepper. Slice tofu into thin strips. Wash, trim and cut bell peppers into strips. Wash, trim and slice spring onions into rings. Stir-fry all in hot oil for 4-5 minutes until just firm. Season with lime juice and remaining teriyaki sauce and remove from heat. Rinse sprouts and coriander and shake dry.

    Warm the wraps briefly on both sides in another pan. Then spread peanut cream, top with bell pepper mixture, tofu, sprouts and coriander, roll up and serve.
