Tofu Tomato Skillet

A vegan alternative to grilled tomatoes with mozzarella or sheep cheese. The abundant minerals magnesium and potassium support heart health.

Ingredients

  • 250 g large tomatoes (2 large tomatoes)
  • 200 g tofu
  • 0.5 bunch wild garlic (6 leaves)
  • 1 tbsp Pumpkin seeds
  • 2 tbsp olive oil
  • Salt
  • Pepper

Instructions

  1. 1.

    Wash the tomatoes, cut off the stem ends and slice the flesh into rounds.

  2. 2.

    Drain the tofu and also slice it into rounds.

  3. 3.

    Wash the wild garlic, shake dry and finely chop with a large knife.

  4. 4.

    Combine the chopped garlic, pumpkin seeds and olive oil in a mortar and grind into a paste.

    Fold aluminum foil twice to create two small shallow bowls.

  6. 6.

    Layer the tomato and tofu slices in the foil bowls. Sprinkle salt and pepper over them.

  7. 7.

    Drizzle the wild garlic pesto over the layers and grill on high heat for about 15 minutes.
