Threefold Meat with Cream Sauce

Ingredients
- 250 g pork fillet
- 250 g veal fillet
- 250 g beef fillet
- 2 lemons
- 50 g dark chocolate (60% cocoa content)
- 1 tsp instant coffee powder
- 1 sachet saffron powder
- 6 tbsp Olive oil
- 2 tbsp breadcrumbs
- 150 g whipping cream
- Salt
- black pepper (freshly ground)

Let the carefully parboiled meat thaw in the freezer, then slice thinly. Juice the lemons, pour half into a bowl, toss the meat slices in it, place on a sieve and drain.

Grate the chocolate and mix with coffee powder and saffron; set aside. In a pan heat 3 tbsp olive oil over high heat, quickly sear the meat slices in batches for about 1 minute, keep warm.

Toast breadcrumbs in remaining oil. Once golden brown, remove from heat, stir in the chocolate‑coffee mixture, pour in cream and simmer for 5 minutes. Season with remaining lemon juice, salt and pepper. To serve, ladle sauce onto warmed plates and arrange meat on top. Serve with saffron rice (cook rice with half a sachet saffron, fold in 1 tbsp butter).
