Tequila Filet Steaks

Ingredients
- 4 beef filet steaks (200 g each)
- 80 ml tequila
- freshly ground pepper
- 2 red chili peppers
- 2 Garlic cloves
- 2 Spring Onions
- 3 tbsp olive oil
- 200 g cooked black beans (or canned red beans)
- Salt
- 1 tsp cumin
- 2 l chili ketchup
- 1 tbsp chopped fresh coriander (for garnish)
- 3 tbsp oil
Instructions

Using a meat injector, spray tequila into the sides of the steaks. Season the steaks with pepper and let rest for 30 minutes.

Wash the chili peppers, cut them lengthwise, remove seeds, discard the white membrane, and dice finely. Peel and dice the garlic. Trim and roughly chop the spring onions.

Heat olive oil in a pan and sauté the chili, garlic, and onion cubes. Add the beans and cook briefly. Season with salt, pepper, and cumin.

Transfer the pan contents to a blender, add chili ketchup and 2 tablespoons of water, and pulse loosely. Taste the salsa again, pour into a bowl, and garnish with coriander.

Heat oil in a pan and sear each steak side for about 3–5 minutes depending on desired doneness, then season with salt. Plate the steaks and serve with bean salsa.
