Ingredients

  • 1 chicken (ca. 1.4 kg)
  • Salt
  • 200 g onions
  • 4 Garlic cloves
  • 1 salted lemon
  • 2 tbsp clarified butter
  • 3 tbsp olive oil
  • 5 saffron strands
  • 1 cinnamon stick
  • 4 fresh figs
  • pepper (ground)

Instructions

    Divide the chicken into eight pieces and season lightly with salt. Peel the onions and garlic. Finely chop half of the onions, slice the other half into rings. Roughly cube the garlic. Finely chop half of the salted lemon, slice the rest into wedges and set aside.

    Heat clarified butter and olive oil in a tajine or Dutch oven. Briefly sauté the chopped onions and garlic. Add the chicken pieces and sear on all sides over high heat for about 3 minutes. Add saffron, cinnamon stick and chopped salted lemon to the chicken. Pour in 350 ml water, cover and simmer over medium heat for 15 minutes.

    Grate the figs, halve them and add to the tajine with the meat. Place the remaining lemon wedges and onion rings on top. Cover and continue simmering over medium heat for another 15 minutes. Remove the cinnamon stick, crush it in a mortar and season the dish with it. Serve immediately.
