Ingredients

  • 400 g tagliatelle
  • 400 g green asparagus
  • 50 g black truffles
  • 4 tbsp butter
  • Salt
  • Pepper (freshly ground)

Instructions

    Peel the lower third of the asparagus, trim the ends, and cut into bite‑size pieces. Wash, brush, and finely shave the truffles. Cook the asparagus in boiling salted water for about 12–15 minutes until tender. Boil the noodles in salted water until al dente.

    Melt butter in a large pan over gentle heat and warm the truffles in it. Season with salt and pepper. Add the asparagus, drain the tagliatelle, add to the pan, gently mix everything together, and serve on preheated plates.
