Tagliatelle with Pesto and Shrimp

Ingredients

  • 400 g tagliatelle
  • Salt
  • 2 bunches basil
  • 2 tbsp toasted pine nuts
  • 4 tbsp freshly grated Parmesan
  • 120 ml olive oil
  • pepper (ground)
  • 2 sprigs Rosemary
  • 2 cloves garlic
  • 8 large shrimp (deveined and peeled except for tail segment)

Instructions

    Cook the tagliatelle in plenty of salted water according to package instructions until al dente.

    Blend basil leaves, pine nuts, parmesan, and olive oil to make pesto. Add more oil if needed to achieve a creamy consistency. Season with salt and pepper.

    Heat 4 tbsp oil in a pan with pressed garlic and rosemary sprigs, then sauté the shrimp for about 1 minute on each side without burning. Season with salt and pepper, set aside, and let them become translucent while repeatedly spooning hot oil over them.

    Drain the tagliatelle slightly, place in a bowl, and mix with the pesto. Divide onto plates, arrange the shrimp on top, and garnish with rosemary sprigs before serving.
