Tagine with Fish and Vegetables

Ingredients

  • 2 carrots
  • 500 g waxy potatoes
  • 4 red onions
  • 8 fresh sardines (about 150 g each, ready to cook)
  • 4 Garlic cloves
  • 1 lemon (juice)
  • 150 ml olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • white pepper
  • Salt

Instructions

    Preheat the oven to 180°C (356°F) with upper and lower heat. Peel the carrots and cut them lengthwise into quarters. Peel the potatoes and slice them into wedges. Peel the onions and dice them about 2 cm cubes. Wash the sardines and pat them dry.

    Peel the garlic and roughly chop it. Crush it finely in a mortar. Mix the oil, cumin, coriander, pepper, and salt together. Rub the sardine fillets inside and out with the spice paste. Combine half of the paste with the onions and spread it over them. Mix the remaining paste with carrots and potatoes and distribute around the edges. Place the sardines on top and bake in the oven covered for about 30 minutes. About 10 minutes before the end, remove the lid to finish cooking.
