T-Bone Steak with Herb Butter

Ingredients
- 175 g soft butter
- 4 anchovy fillets (in salt)
- 1 tbsp capers (jar)
- 0.5 handful parsley
- 0.5 handful chives
- 0.5 shallot
- 3 tbsp medium hot mustard
- Sea salt
- pepper (ground)
- 1 splash Lemon juice
- 4 T-Bone steaks (350–400 g each)
- 2 tbsp olive oil

Whisk the butter in a small bowl until creamy. Rinse the anchovies and capers, pat dry with paper towels, and finely chop. Wash the parsley and chives, shake off excess water; slice the chives into fine ribbons and finely chop the parsley leaves. Peel and dice the shallot. Combine the anchovies, capers, herbs, and shallot with the mustard and add to the butter. Season with salt, pepper, and lemon juice, mix well, and refrigerate for at least 30 minutes.

Rinse the steaks, pat dry, and season with salt and pepper. Heat the oil in a skillet over high heat; sear each side of the steak for about 1 minute until browned. Then flip and cook for an additional 3–5 minutes (depending on desired doneness). Let the finished steaks rest briefly, then spread the herb butter over them and serve.
