Swiss Chard Dumplings

Ingredients
- 200 g White bread
- 200 ml milk
- 1 onion
- 500 g Swiss chard
- 5 tbsp butter
- 3 eggs
- Salt
- pepper (ground)
- 1 pinch freshly grated nutmeg
- 100 g Parmesan

Remove the crust from the white bread, slice it into thin pieces and place them in a bowl. Warm the milk, pour it over the bread, cover and let soak for 30 minutes.

Meanwhile peel and dice the onion. Wash, trim and cut the Swiss chard into about 1 cm wide strips. Sauté the onion in 1 tbsp butter until translucent. Add the chard, cook for about 4 minutes, then strain through a sieve and puree in a pot. Mix the soaked bread, chard puree and eggs by hand. Season with salt, pepper and nutmeg.

Bring plenty of water to a boil in a large pot, season with salt. Pinch off portions of dough with two tablespoons and drop them into the boiling water. Cook until they rise to the surface. Remove with a slotted spoon and drain. Melt the remaining butter. Serve the dumplings with the butter and grated Parmesan. Pair with tomato sauce or salad.
