Sweet Yeast Chocolate Rolls

Ingredients
- 500 g flour
- 0.5 cube yeast (21 g)
- 75 g sugar
- 150 ml lukewarm milk
- 50 g softened butter
- 250 g quark
- 1 pinch salt
- 2 Eggs
- 2 tsp vanilla sugar
- 0.5 tsp grated lemon zest (unprocessed)
- 100 g chocolate chips
- 2 Tbsp whipping cream

Sift the flour into a bowl, form a well in the center. Crumble the yeast into it, add 2 tsp sugar and stir with 5 tbsp milk and a little flour to make a small dough. Dust with flour and cover; let rise in a warm place for about 15 minutes.

Add the softened butter, well-drained quark, salt, eggs, vanilla sugar, remaining sugar, and grated lemon zest to the bowl and knead into a smooth dough. Add enough milk so the dough is soft but not sticky. Cover and let rise for about 30 minutes until doubled in size.

Preheat the oven to 180°C (350°F) with both top and bottom heat.

Knead the dough again, quickly folding in the chocolate chips. Divide into about 15 pieces, shape into balls, and place on a baking sheet lined with parchment paper. Brush with whipping cream and cut crosswise. Bake for about 20 minutes until golden brown.
