Ingredients

  • 1 sweet potato (400 g)
  • 125 g shredded mozzarella
  • 0.5 bunch Parsley
  • 0.5 bunch Chives
  • 200 g grainy cream cheese
  • Salt
  • Pepper
  • 1 handful arugula (40 g)
  • 100 g cherry tomatoes
  • 20 g pine nuts

Instructions

    Peel, wash, and slice the sweet potato into thin rounds.

    Arrange the sweet potato slices in an overlapping square on a parchment-lined baking sheet, sprinkle evenly with mozzarella, and bake in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for about 10 minutes until golden brown. Flip and bake another 5 minutes on the other side.

    Meanwhile wash parsley and chives, shake dry, pluck leaves from stems and roughly chop. Slice chives into rings. Mix herbs with grainy cream cheese and season with salt and pepper.

    Clean, wash, and spin dry arugula. Wash tomatoes and quarter them. Spread the cream‑cheese mixture on the sweet potato wrap. Top with arugula, tomatoes, and pine nuts. Fold together, cut in half, and arrange the filled wraps on plates.
