Ingredients

  • 0.5 small Cantaloupe melon
  • 0.5 small Charentais melon
  • 1 Pomegranate
  • 1 pinch mild curry powder
  • 0.5 tsp Fennel seeds
  • 1 tsp finely diced ginger
  • 2 tbsp cane sugar
  • 1 lemongrass stalk
  • 1 lemon (juiced)

    Pit the melons, peel them, and cut into bite-sized pieces.

    Add the lemongrass with 50 ml water, lemon juice, fennel, and ginger to a pot and simmer gently for about 5 minutes. Add the sugar and curry powder, dissolve, remove the lemongrass, set aside, and let cool. Puree 1/4–1/3 of the melon pieces finely, add a little water if needed, and season with the spiced broth. Halve the pomegranate, carefully peel each half outward, extract the seeds along with the melon pieces, and mix into the fruit sauce. Chill well until serving. Arrange on plates.
