Ingredients

  • 75 g flour
  • 50 g chopped almond kernels
  • 50 g chopped hazelnuts
  • 100 g butter
  • 50 g Brown sugar
  • 1 pinch cinnamon
  • 1 tsp grated lemon zest
  • Salt
  • 60 g dried cranberries
  • butter (for the pan)

Instructions

    Preheat the oven to 175°C fan.

    Cut the apricots into strips. Slice the brioche, place on a parchment-lined tray and toast briefly. Then remove again.

    Whisk the pudding powder with milk, eggs, sugar, lemon zest and a pinch of salt. Dip the brioche slices briefly in the egg mixture. Layer the cranberries and apricots in a greased baking dish, pour over the remaining vanilla milk, and let sit for 15 minutes.

    Process the flour with almonds, hazelnuts, butter, sugar, and cinnamon into crumbly streusel and sprinkle over the casserole. Bake at the same temperature for 20-25 minutes. Serve optionally with lightly whipped cream.
