Ingredients
- 750 g small onions
- 400 ml balsamic vinegar
- 250 g sugar
- 2 tsp sea salt
- 2 tsp black peppercorns
- 0.5 tsp allspice berries
- 2 small red chili peppers
- 0.5 tsp mustard seeds
- 0.5 tsp Coriander seeds

Peel the onions. Bring vinegar with 250 ml water, sugar, salt and spices to a boil, add the onions and simmer gently for about 3 minutes. Remove the onions and layer them in clean, hot-rinsed jars.

Add one chili pepper to each jar. Reboil the liquid and pour it over the onions (they should be covered). Seal the jars immediately and let the onions mature for at least one week before eating.
