Sweet and Sour Marinated Sardines

Ingredients
- 12 sardines (ready to cook without head)
- 2 Onions
- 50 ml olive oil
- 2 bay leaves
- 80 ml white wine vinegar
- 2 tbsp raisins
- 2 tbsp pine nuts
- 1 tsp sugar
- salt
- pepper (from the grinder)
- flour (for coating)
- plant oil (for frying)

For the marination, peel and slice the onions into rings. Heat 50 ml olive oil in a pan and gently sauté the onion rings. Add bay leaves and simmer for about 10 minutes with occasional stirring until softened. Then deglaze with vinegar, add raisins and pine nuts, and season well with pepper and sugar.

Wash the fish, pat dry with kitchen paper, salt, pepper, and coat in 3-4 tbsp flour. Heat 2-3 tbsp oil in a pan and fry the sardines for about 1-2 minutes per side until golden brown. Place them in a shallow dish and pour the marination over them. Let cool slightly, then cover with cling film and refrigerate for 2 days to absorb flavors.
