Sweet and Sour Beef Stew

Ingredients
- 1 kg beef (top sirloin or shoulder)
- 4 sweet potatoes
- 4 large carrots
- 2 fresh corn cobs
- 4 Garlic cloves
- 300 ml prepared beef broth
- 5 tbsp oil
- 2 Bay leaves
- 1 tbsp Cornstarch
- Salt
- pepper (ground)
- 1 tsp Cayenne pepper
- 1 tbsp sugar
- 2 tbsp Apple cider vinegar

Wash and dry the beef, then cut into roughly 2 cm cubes. Peel the carrots, quarter them lengthwise, and chop into pieces. Wash, peel, and cube the sweet potatoes. Wash the corn cobs and cook in plenty of sugar water for about 10 minutes until the kernels are tender. Drain the cobs and slice into thick rounds. Peel the garlic and finely mince.

Heat oil in a heavy pot and sear the beef on all sides. Deglaze with beef broth, then add sweet potatoes, carrots, bay leaves, and garlic. Season with salt, pepper, cayenne pepper, sugar, and apple cider vinegar. Cover and simmer over low heat for 40 minutes. Remove 3 tbsp of broth, whisk in cornstarch, and return to the pot. Continue cooking on low heat, stirring until the broth thickens. Add the corn rounds and let it steam for another 10 minutes. Adjust seasoning with more cayenne pepper if desired.
