Ingredients
- 800 g pike fillets (ready-to-cook without skin)
- 1 egg
- 2 tbsp freshly chopped herbs (e.g. chives, dill and parsley)
- 3 tbsp whole-grain breadcrumbs
- Salt
- a splash lemon juice
- Pepper
- 2 tbsp Rapeseed oil
- 1 sour apple
- 1 tbsp honey
- 150 ml apple juice
- 100 g Sour cream
- 1 tbsp freshly chopped parsley

Rinse the pike fillets, pat dry and roughly cube. Pulse in a food processor until finely minced. Mix the egg with herbs into the fish mixture and add breadcrumbs until the mass is well bindable. Season with salt, lemon juice and pepper, then shape 12–16 small patties.

Heat oil in a pan and fry the pike patties golden brown for 2–3 minutes on each side.

For the sauce peel, quarter, core and cube the apple. Blend it with honey, apple juice and sour cream until smooth. Stir in parsley and season with salt and pepper.
