Ingredients

  • 100 g whole grain breadcrumbs
  • 120 ml milk (3.5% fat)
  • 1 Shallot
  • 4 tbsp butter
  • 500 g ground beef
  • 1 egg
  • Salt
  • Pepper
  • 1 tbsp whole grain flour
  • 100 ml meat broth
  • 100 ml whipping cream
  • 4 tbsp lingonberries for serving (from jar)

Instructions

    Add breadcrumbs to a bowl. Bring milk to a boil, pour over the breadcrumbs and let soak for about 10 minutes.

    Meanwhile peel and finely dice the shallot; sauté in 1 tbsp hot butter until translucent, then remove from heat. Let cool slightly and mix with ground beef and egg into the soaked breadcrumbs. Season with salt and pepper and knead into a well-formed dough. If needed add more breadcrumbs or milk. Shape into small balls.

    Brown the meatballs in 2 tbsp hot butter in a hot pan for about 10 minutes on all sides, then remove and keep warm.

    Add remaining butter to the pan and stir in flour. Deglaze with broth and cream, scraping up browned bits. Simmer gently while stirring for about 5 minutes until slightly thickened. Season with salt and pepper, plate with meatballs and lingonberries, and serve.
