Ingredients

  • 250 g flour
  • 2 eggs (size S)
  • Salt
  • 200 ml water
  • 2 tsp oil
  • ground salt, pepper from the mill
  • 1 bunch parsley
  • 1 egg (size L)
  • 200 ml milk
  • 100 g grated Emmental cheese

Instructions

    Mix flour with eggs and salt. While stirring add enough water to form a smooth, thick batter. Add oil and continue mixing and beating until bubbles appear. Cover the dough and let rest at room temperature for 30 minutes.

    Bring plenty of salted water to boil in a large pot. Place part of the dough on a wet board and scrape thin, long spätzle into the boiling water with a wide knife. When they rise to the surface, lift them with a slotted spoon, rinse under cold water, and drain on a sieve. Repeat with the remaining dough.

    Rinse parsley, shake dry, and finely chop leaves. Whisk egg with milk. Season with salt and pepper. Stir in parsley. Pour mixture over spätzle and sprinkle grated Emmental cheese. Bake in preheated oven at 200°C (gas: level 3-4, fan: 180°C) for 10–15 minutes.
