Sugar-Free Granola

Spoonsparrow's sugar-free granola is a healthy start to the day and still tastes nicely sweet thanks to the bananas.

Ingredients

  • 100 g rolled oats
  • 100 g quick oats
  • 50 g puffed amaranth
  • 50 g ground flaxseed
  • 2 tbsp sesame seeds (15 g each)
  • 50 g nut mix
  • 50 g dried dates (pitted)
  • 2 ripe bananas
  • 2 tbsp tahini (15 g each; sesame paste)
  • 1 tsp cinnamon
  • 1 pinch salt
  • 3 tbsp goji berries (15 g each)

Instructions

    Combine rolled oats, amaranth, flaxseed and sesame seeds in a bowl and mix well. Chop the nuts, dice the dates; add both.

    Peel bananas, cut into small pieces, place in another bowl and mash with a fork. Add tahini and season with cinnamon and salt. Add the banana-tahini mixture to the dry ingredients and mix thoroughly.

    Spread the granola mixture evenly on a baking sheet. Bake in a preheated oven at 180 °C (160 °C convection; Gas: Mark 2–3) for approx. 30 minutes, turning after each 10 minutes.

    Let the sugar-free granola cool in the oven with the door open for about 10 minutes. Remove from the oven and mix in goji berries.
