Sugar-Free Banana Bread

This sugar-free banana bread from Spoonsparrow tastes great as a snack or for breakfast.

Ingredients

  • 4 very ripe bananas
  • 300 g whole wheat flour
  • 1 packet Weinstein baking powder
  • 1 tsp vanilla extract
  • 2 Eggs
  • 4 tbsp liquid coconut oil (+ some for the baking pan)
  • 1 tsp cinnamon

Instructions

    Peel 3 bananas and mash them with a fork. Place in a bowl. Mix flour and baking powder. Combine all ingredients in the bowl.

    Peel the remaining banana and halve it lengthwise. Pour the batter into a greased baking pan and arrange the halved banana on top.

    Bake sugar-free banana bread in a preheated oven at 180 °C (160 °C convection; Gas: level 2–3) for approx. 40–50 minutes. Then remove from the oven, take out of the pan and let cool. Serve sliced.
