Stuffed Zucchini with Millet and Cheese
Vegetarian stuffed zucchini filled with millet, cheese, and vegetables – delicious and wholesome.
Ingredients
- 100 g Millet
- Salt
- 4 zucchini
- 1 Carrot
- 1 onion
- 3 tbsp oil
- Pepper
- 1 egg
- 50 g grated cheese
- 200 g processed cheese
- broth
- 1 tbsp flour
Instructions

Cook millet in salted water for 10 minutes. Wash zucchini, cut a lid lengthwise and scoop out the lower half with a spoon. Chop the flesh and lids.

Peel carrot and grate coarsely. Peel onion and dice finely. Heat 1 tbsp oil, sauté chopped zucchini, carrot, and onion for 5 minutes. Season with salt and pepper.

Drain millet and add to the mixture. Stir in egg and spread over zucchini halves. Sprinkle grated cheese on top.

Grease a baking dish with remaining oil and place stuffed zucchini inside. Bake in preheated oven at 200°C (gas level 3, fan 170°C) for about 35-40 minutes until golden.

Melt processed cheese in broth, whisk flour into water to make a smooth sauce, then pour over zucchini before serving.
