Stuffed Zucchini with Cooked Ham

Ingredients

  • 2 zucchini (about 150 g each)
  • Salt
  • Pepper (freshly ground)
  • 1 Shallot
  • 2 Tomatoes
  • 50 g cooked ham
  • 125 g cream cheese
  • 1 tsp thyme leaves (chopped)
  • 0.25 tsp paprika powder (sweet)

Instructions

    Wash the zucchini, cut them lengthwise in half, scoop out the seeds with a spoon, hollow slightly and season the inside with salt and pepper.

    Peel and finely chop the shallot. Blanch the tomato, peel, quarter, seed and dice it.

    Dice the ham finely.

  4. 4.

    Mix the shallot, tomato and ham with cream cheese, season with thyme, salt and pepper, then fill the zucchini with this mixture.

    Place the stuffed zucchini in a greased baking dish and bake in a preheated oven at 180°C for about 20–25 minutes.
