Ingredients

  • 500 g mixed ground meat
  • 1 onion
  • 40 g Butter
  • 1 loaf of bread (from yesterday)
  • 0.125 l hot milk
  • 0.5 bunch Parsley
  • 2 Eggs
  • 4 tbsp Vegetable oil
  • 1 tsp Marjoram
  • Salt
  • Pepper (freshly ground)

  • 8 hard‑boiled eggs
  • 0.5 head frisée salad
  • 200 g yogurt
  • 1 tbsp Lemon Juice
  • 1 tbsp chives

Instructions

    Peel and finely dice the onion, then sauté in 20 g butter. Soak the bread in hot milk. Finely chop the parsley. Mix the meat with an egg, onion, squeezed bread, marjoram, salt, and pepper; knead in a bit of bread crumbs if needed. Peel the eggs. Using your hands, form eight flat discs from the meat mixture, place one peeled egg in each center, and shape the meat around it into patties. Heat oil and butter in a pan, then cook the patties by turning them over at medium heat for 8 minutes.

    Whisk yogurt with lemon juice, salt, and pepper, then stir in the chives.

    Wash, trim, and tear the frisée salad into bite‑sized pieces; arrange on plates. Serve the meatball patties topped with the yogurt sauce over the salad.
