Stuffed Kohlrabi Schnitzel with Sesame Sauce

Ingredients

  • 4 kohlrabi (about 250 g each, cleaned, cut into 6 equal thick slices)
  • 75 g sesame seeds
  • 4 egg yolks
  • 200 g Sour Cream
  • 300 g frisée salad (cleaned, washed and torn into bite‑sized pieces)
  • 1 tbsp Lemon Juice
  • 1 tsp sharp mustard
  • 6 slices Tilsiter cheese
  • 6 slices Emmental cheese
  • 4 tbsp clarified butter
  • Salt
  • ground pepper

Instructions

  1. 1.

    Cook the kohlrabi slices in boiling salted water for about 8 minutes, then drain.

    Whisk sesame seeds and egg yolks separately with 2 Tbsp water each, place in shallow dishes for breading.

  3. 3.

    Season the kohlrabi slices with salt and pepper; lay half of them with one slice of Tilsiter and one slice of Emmental on top, cover with the remaining slices, then dip in egg yolk and coat with sesame mixture.

    Melt clarified butter in a large pan and brown the schnitzels over medium heat.

    For the salad whisk sour cream, lemon juice, mustard, salt and pepper into a dressing, toss with frisée salad.

    Serve the schnitzels with the salad.
