Stuffed Chicken Breast in Ham Wrap

Ingredients

  • 4 chicken breast fillets (about 150 g each)
  • 250 g Mushrooms
  • 1 Garlic clove
  • 1 tbsp butter
  • 1 tsp freshly chopped rosemary
  • Salt
  • Pepper (freshly ground)
  • olive oil (for brushing)
  • 8 slices ham (e.g., Parma ham)

Instructions

    Preheat the oven to 180°C (350°F) with fan and top heating.

    Wash the chicken breasts, pat dry, and cut a pocket on each side. Clean and finely dice the mushrooms. Peel and finely chop the garlic, then sauté with the mushrooms in hot butter until the liquid has evaporated. Remove from heat, add rosemary, salt, and pepper to taste. Fill the pockets with the mushroom mixture and wrap each breast with ham slices. Tie securely with kitchen twine and place on a lightly oiled baking tray.
