- 4 red bell peppers
- 1 day-old roll
- 1 onion
- 2 Garlic cloves
- 2 tbsp olive oil
- 300 g mixed ground meat
- 1 egg
- 100 g carrots
- 250 ml broth
- Salt
- Pepper (freshly ground)
- 2 tsp sweet paprika powder
- 4 tbsp grated aged Bergkäse

Wash peppers, cut off tops, rinse and deseed. Soak roll in lukewarm water. Peel, finely chop carrot, onion, and garlic; sauté in 1 tbsp oil. Mix ground meat, egg, and well-drained roll with the vegetable mixture; season with salt and pepper. Fill peppers with the stuffing, replace tops, brush with remaining olive oil. Stir broth and paprika powder, pour into a pot, place peppers inside. Seal tightly and simmer over low heat for about 45 minutes, adding water if needed. Remove tops, sprinkle cheese on stuffed peppers, and broil for a few minutes until cheese melts and lightly browns.
