Ingredients

  • 2 kg strawberries
  • 2 lemons
  • 1000 g gelatin sugar (2:1)
  • 2 tbsp green peppercorns (pickled)

Instructions

    Wash, clean, trim, and drain the strawberries well, then place them in a pot and crush roughly. Stir in 250 ml water and simmer for about 5 minutes. Strain the strawberry puree through a muslin cloth to extract juice.

    Squeeze the lemons and mix the juice with the strawberry juice. Measure out the mixture and pour it into a pot. Bring to a boil with the sugar, stirring well. Let it bubble vigorously for about 4 minutes.

    Add the peppercorns. Skim off foam from the jelly and pour hot into pre‑filled twist‑off jars until full. Seal the jars immediately and let them cool.
