Strawberry Parfait Without Egg

Ingredients
- 500 g strawberries
- 110 g powdered sugar from raw cane sugar
- 1 tbsp Lemon Juice
- 250 g mascarpone
- 150 g Greek yogurt
- 0.25 tsp vanilla powder
- 300 g whipped cream

Clean and wash the strawberries, setting aside a few for garnish. Puree the rest with 50 g powdered sugar and lemon juice until smooth. Strain the puree through a sieve.

Whisk the mascarpone with remaining powdered sugar, yogurt, and vanilla. Fold in stiffly beaten whipped cream. Stir in two-thirds of the strawberry puree into the parfait mixture; keep the remainder chilled. A marbled effect is achieved by gently swirling the mixture with a spatula few times.

Line a terrine mold with plastic wrap so it hangs 5–7 cm over the sides. Fill with the parfait mixture, press the excess wrap over the surface, and freeze the strawberry parfait without egg for at least 5 hours, preferably overnight.

Just before serving, dip the terrine mold in hot water. Transfer the parfait onto a serving plate or cutting board, peel off the plastic wrap, and serve whole on a platter or sliced on individual plates. Garnish with remaining strawberry sauce and fresh strawberries.
