Strawberry Meringue Cake
Delicious strawberry meringue cake from the sheet pan. The ideal cake for strawberry season! Spoonsparrow
Ingredients
- 300 g Strawberries
- 0.5 Organic lemon
- 150 g butter
- 150 g sugar
- 8 g vanilla sugar (1 packet)
- 100 ml milk (1.5% fat)
- 3 eggs
- 400 g flour
- 2 tsp Baking powder
- 20 g powdered sugar (2 tbsp)
- 75 g meringue
Instructions

Wash, clean and chop strawberries into small pieces.

Rinse half a lemon hot, pat dry and grate 1 tsp of zest finely.

Whisk butter until fluffy, then gradually add sugar, vanilla sugar, lemon zest, milk and eggs, mixing well after each addition.

Sift flour with baking powder together, then fold into the wet mixture.

Spread the batter evenly on a sheet pan lined with parchment paper. Top with strawberry pieces and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 35–40 minutes until golden brown (test with a skewer).

Remove cake from oven, let cool, lift it off the pan using the parchment paper and set on a cooling rack. Dust with powdered sugar and crumble meringue over the top.
