Ingredients

  • 26 Amaretti cookies
  • 80 ml Milk (3.5% fat)
  • 1 splash bitter almond aroma
  • 500 g strawberries
  • 1 Organic lemon
  • 0.5 Vanilla bean
  • 200 g whipping cream
  • 250 g mascarpone

Instructions

    Set aside 6 Amaretti cookies for garnish, place the rest in a freezer bag and crush with a rolling pin. Add milk and aroma and let sit.

    Peel, wash, and drain strawberries; set aside 6 berries. Wash lemon hot, dry, grate about ½ tsp zest, halve and juice. Split vanilla bean lengthwise and scrape out the seeds. Hull remaining strawberries, chop them, and mix with 2 tbsp lemon juice and vanilla seeds.

    Whip cream very stiff, stir mascarpone with lemon zest until smooth, then fold in whipped cream.

    Spread half of the cream onto 6 glasses, top with 2/3 of the soaked Amaretti, and distribute strawberries on top. Spread remaining Amaretti mixture over the glasses and cover with the rest of the cream. Sprinkle a cookie crumb over each and garnish with a strawberry. Serve Strawberry Trifle with Mascarpone.
