Strawberry Jam with Agar‑Agar

With the strawberry jam made with agar‑agar from Spoonsparrow you save a lot of sugar without sacrificing flavor!

Ingredients

  • 500 g strawberries
  • 100 g honey
  • 50 ml lemon juice
  • 2 tsp agar‑agar

Instructions

    Mash or puree the strawberries and mix with the honey. Bring to a boil in a pot while stirring, adding a little water if needed to prevent burning. Let it bubble for 5 minutes. Dissolve the agar‑agar in 50 ml water and the lemon juice, stir in, and bring to a second boil.

    Fill the jam into clean, hot-washed screw jars and immediately invert them so air can escape. Leave standing until fully cooled.
