Strawberry Clafoutis

A French classic that tastes just as delicious in this spring‑fresh and healthier version!
Ingredients
- 250 g strawberries
- 60 g butter (4 tbsp)
- 4 eggs
- 200 g spelt whole‑grain flour (or wheat or rye whole‑grain flour)
- 350 ml milk (3.5% fat)
- 20 g honey
- 1 tsp vanilla powder
- 1 pinch salt
Instructions

Wash, clean and leave whole or halve the strawberries depending on size.

Melt 2 tbsp butter in a small pot. Separate the eggs. In a bowl whisk the flour with the milk until smooth. Add egg yolks, melted butter, honey, vanilla powder and salt; whisk well. Beat the egg whites to stiff peaks and fold gently into the batter with a spatula.

Melt the remaining butter in an oven‑proof pan. Pour the batter over the strawberries and sprinkle them on top. Bake in a preheated oven at 180 °C (160 °C fan, gas: level 2–3) for 15–20 minutes until golden brown.

Remove the strawberry clafoutis from the pan, cut into pieces and serve.
